Omelette with Artichokes

Ingredients for 4 people

8 artichokes
Juice of 2 lemons
4 tablespoons of olive oil
2 tablespoons of butter
5 eggs
4 tablespoons of grated cheese (optional)
salt - pepper

  1. Clean the artichokes and dress them with the lemon juice.

  2. Then cut them in thin slices

  3. Put in them in anti-stickable frying pan with a cup of water, cover them and fry them for 15 minutes they until soften up.

  4. Add the olive oil, butter and sizzle them.

  5. . Mix the eggs in which we must add salt, pepper and cheese if you want, spreading the artichokes and cooking them on both sides.

  6. Serve the omelette warm and accompany it with season salad.
