Cod rings with artichokes dressed in lemon and eggs

  • 800 gr. Of cod Kallimanis in rings

  • 2 tea cups of water

  • 8 medium-sized or 4 large frozen artichokes

  • onion

  • carrot

  • 1 bay leaf

  • grains of black pepper

  • 3 fresh onions chopped

  • 1 tea box of chopped dill

  • 1 tea cup of olive oil

  • 2 eggs

  • juice of half a lemon

  • salt, pepper


  1. Defrost the cod rings using the instructions from it's package. Then Wash them ,dry them with kitchen paper and salt and pepper them.

  2. In a large pot boil for 10 minutes : 2 cups of water, half the onion, a carrot, bay leaf, some salt and grained pepper .Strain them and keep the broth.

  3. Heat up the olive oil and slightly sizzle the onions. Add the artichokes, the cod rings ,the dill and the broth you kept. Add salt and pepper if necessary. Leave the food to boil lightly for 10 minutes and then remove them from the fire.

  4. Mix the eggs in a small blender adding the lemon juice and just half a cup of hot broth from the pot. Continue mixing and when the egg and lemon bind , remove the saucepan from the fire and pour the egg and lemon mixture on the food. Shake the pan with your hands so that the sauce goes everywhere. Be careful not to stir with spoon because you will dissolve the artichokes and the fish.

  5. Put the pot back on a low fire to warm up and bind the sauce without letting it boil.

  6. Serve food on a plate and sprinkle it with the chopped dill.
