Tart with Artichokes

For 4 People 250gr.of flour
160gr. of butter
1 tablespoon of milk
6 artichokes
6 small potatoes
3 eggs
200gr. of milk cream
1 clove of garlic
1 lemon
80gr.of grated Parmesan cheese
200gr. of sliced gouda cheese
½ a packet of parsley
2 small branches of marjoram
4 tablespoons of extra fine virgin olive oil
Salt

  1. Mix the flour with the butter with a blender into pieces with a pinch of salt. Once the mixture becomes pretty solid add salt. Then add the milk and an egg and ferment it until the dough becomes a ball. Wrap it with a transparent film and place it in the refrigerator to freeze for about half an hour.

  2. Clean the artichokes and cut in slices , remove the inside and submerge them in water in which you have already poured the lemon juice. Then, put the artichokes in a casserole with the oil, the potatoes, cleaned and cut into slices about half a centimeter thick, the garlic and the parsley slightly chopped. Add salt and then add one tablespoon of water and leave the ingredients to boil for about 20 minutes with the lid closed. Then drain them and leave them to cool off.

  3. Open the dough 2-3 mm thick and place it in a tart pan of 22 centimeters in diameter. Cut all the dough that is left over the sides of the tart pan and make holes in the dough's base.

  4. Mix the remaining eggs and stir them with the milk cream, the grated cheese, the marjoram and the boiling vegetables. Spread the mixture over the dough and place the sliced Gouda cheese over it.

  5. Put the tart on the low layer rack in the oven and bake it at 200 degrees Celsius for 30 minutes. Then, place the rack higher in the middle of the oven and continue baking for another 20 minutes.

  6. Remove the tart pan from the oven and then place the tart on a platter and serve, hot or lukewarm, either as a companion or as a main course.
