Artichokes with garlic cream (Skordalia)

We take the artichokes (the wild ones are tastier), we wash them, remove the outer leaves and place them in a casserole to boil the water.
We boil the artichokes for 5 minutes, strain them and when they cool off we remove the leaves one by one and put the garlic cream ( skordalia ) at the bottom, where the flesh is whiter.
